Recipe for cooking serbian skillet pork - muckalica

1 1/2 lb. (one and a half lbs. ) boneless pork shoulder
2 Tbsp. canola (or other vegetable) oil
1/4 c. water
3 med. onions, sliced
1 med. tomato, chopped
1 1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
1/8 to 1/4 tsp. crushed red pepper
1 med. green bell pepper, cut into strips
2 oz. feta cheese, cut into 3/4-in. cubes
Hot cooked rice

Trim fat from pork. Cut pork into 1/2-in. slices; cut slices into 1/2-in. strips. Heat oil in skillet until hot. Cook and stir pork in oil over med. heat until brown, about 15 mins.; drain. Add water, onions, tomato, salt, paprika, pepper and red pepper. Cover and simmer until pork is tender, about 1/2 an hour, adding water if necessary.

Add green pepper. Cover and simmer until green pepper is crisp-tender, 5-10 mins. Top with cheese.

Serve with rice.

Yields 4 servings.
