Heavy Bottom Pans
Heavy bottomed pans are used for frying because they heat the
oil to a higher heat and are faster due to having a larger area
to heat. In addition, they store more heat which makes browning
and cooking more even. Many chefs use these to braise their foods
to seal in the juices. That way when you cut into a juicy braised
steak it runs with juices. Having the ability to brown and cook
in the same pan is what cooking is all about. Among other things

The best thing about heavy bottomed pan is the ability to start
cooking your steaks on high heat, glazing them and then popping
them into a hot oven to finish cooking. When you take them out
