Large Woks

A large wok allows for even heating and cooking over high temperatures. Large woks are used worldwide and especially in Indian cuisine. They perform many other things besides stir fry including:

• Steaming
• Deep frying
• Braising
• Stewing
• Making soup

Woks are known for being rounded on the bottom but many now have a fluted bottom to be used over electric stoves. The sides of a wok are dimpled making it easy to grab meats, pour out of the oil, drain and then return to the oil to finish cooking. This is how typical food is cooked in a wok, by pulling the food in and out of high temperature oil, such as peanut oil. The large sides help to flip the foods together when different ingredients are added. Then simmering in the juices brings the flavors together.
