Recipe for cooking cod with vegetables

2 lbs. fish fillets
3 Tbsp. lemon juice
1 1/2 tsp. salt
1/8 tsp. pepper
2 med. carrots, coarsely shredded
1 large stalk celery, minced
1 med. onion, chopped
5 slices bread (crusts removed), cubed
1/2 c. butter or butter-replacement, melted
1/2 tsp. salt
1/2 tsp. ground sage
1/2 tsp. ground thyme
3 Tbsp. dry bread crumbs
2 Tbsp. snipped parsley
1/2 tsp. paprika
If fish fillets are large, cut into serving pieces. Arrange fish in ungreased 12 x 7 1/2-in. baking dish or an 8-in. square or rectangular baking dish. Sprinkle and distribute with lemon juice, 1 1/2 tsp. salt and the pepper. Mix carrots, celery, onion, bread cubes, butter, 1/2 tsp. salt, sage and thyme. Spread in an even way over fish. Mix bread crumbs, parsley and paprika; sprinkle and distribute over vegetables. Cover and bake at 350 degrees fahrenheit until fish flakes easily with fork, about 35 mins.
Yields 6 servings.
