1 lb. ground beef 1 egg 1/2 c. cold mashed potatoes 1/2 tsp. salt 1/4 tsp. pepper 1/4 c. minced pickled beets 2 Tbsp. minced onion 2 Tbsp. capers Mix beef, egg, potatoes, salt and pepper. Stir in remaining ingredients. Shape mixture into 4 patties, each about 1 in. thick. Set oven to broil or 550 degrees fahrenheit. Broil patties with tops about 4 in. from heat until desired doneness, 6 to 8 mins. on each side for med. Top each patty with fried egg if desired. Yields 4 servings.
