Recipe for cooking pebre

1 med. onion, finely chopped
1 to 2 cloves garlic, finely chopped
3 Tbsp. finely chopped fresh cilantro (coriander)
2 Tbsp. finely chopped fresh parsley
1 to 6 fresh hot green chile peppers,
    seeded and finely chopped
4 Tbsp. olive oil
1 Tbsp. lemon juice
Salt, to taste

Combine all ingredients in a small bowl and allow to sit at room temperature for at least 1 hour.

Makes about 1 c..
