KAJU CAKE (Cashew)

Cashew nuts 20
Sugar 2cup
Coconut 1Cup (grated)
Ghee (melted butter) 3 tbsp
  • Soak cashew for 1 hour. Grind the coconut and cashews in the blender very smoothly.
  • Heat the pan with 2 tbsp of ghee and add grounded paste and fry well.
  • Add sugar and stir well for about 15-20 min.
  • Stir continuously to avoid sticking.
  • Cook until the mix becomes very thick.
  • Apply the remaining ghee in a plate uniformly and pour the mix.
  • Cut into diamond shape pieces when it is hot.
  • Refrigerate and serve cold.
