BOONDI

Besan flour 2 cup (gram flour)
Sugar 1 1/2 cup
Cashews 15 (halves)
Raisins 15
Cardamom powder 1/2 tsp
Ghee 3 tbsp
Water 3/4 cup
Cloves 5
Sugar candy 1/2 cup
Oil For frying
  • Mix the sugar with water and boil for 15 mints, to make sugar syrup, add cardamom powder to the syrup.
  • Roast the cashew nuts and raisinsin butter until it becomes golden brown. Keep it aside.
  • Mix the besan flour with water and make a batter. (should not be very thick)
  • Heat oil, hold the boondi plate (a plate with lot of holes) above the oil and pour the batter into the plate, so that very smalldroplets of the batter are dropped into the hot oil.
  • Cook the boondi 1 min the low flame. keep it aside.
  • Mix boondi with the sugar syrup and add roasted raisins, cloves and cashew nuts.
  • Add sugar candy and mix well.
