Vegetarian Curry Recipes

ARACHU VITA SAMBAR

Toor dal 1/2 cup
Okra 1 pound
Tamarind juice 2 cup
Sambar powder 1 tsp
Urad dal 1 tsp
Mustard seeds 1 tsp
Turmeric powder 1/4 tsp
Coconut (grated) 1 tbsp
Salt
Coriander leaves Chopped
Curry leaves
Oil
  • Fry urud dal and coconut with little oil.
  • Grind the fried urud dal and coconut in blender with little water into paste. Keep it aside.
  • Cook the toor dal with turmeric powder and keep it aside.
  • Heat the pan with the oil and add chopped okra and add tamarind juice, sambar powder, mix well. Let it boil for 4 min.
  • Now add the cooked toor dal and salt. Let it boil for 5 min.
  • Add the urad dal, coconut paste, mix well.
  • Cook in the medium heat until it becomes thick gravy.
  • Heat the another pan with the oil and add mustard seeds, urad dal and curry leaves, fry for a min. Add this to the gravy and mix well.
  • Garnish with the chopped coriander leaves.
  • Serve hot with rice.
