Vegetarian Curry Recipes

MIXED VEGETABLE PARUPPUSILI

Toor dal 1-1/2 tsp
Bengal gram dal 1-1/2 tsp
Moong dal 1-1/2 tsp
Urad dal 1-1/2 tsp
Turmeric powder 1/2 tsp
Red chilies 3
Green chilies 3
Turmeric powder 1/4 tsp
Asafoetida a pinch
Mustard seeds 1 tsp
Urad dal 1 tsp
Beans 1/4 cup (chopped)
Carrot 1/4 cup (chopped)
Peas 1/4 cup
Cauliflower 10 florets
Capsicum 1/4 cup (chopped)
Salt
Oil
  • Cook the vegetables adding turmeric powder and salt. Drain the water and Keep it aside.
  • Soak dals in water for 4 hours. Drain the water and grind the dals with red chilies, green chilies, asafoetida into a coarse paste without adding water.
  • Add turmeric powder, little salt, 1 tbsp oil (to make soft usili) and mix well.
  • Spread this mixture on a plate and steam for 5 minutes.
  • Take out with oiled hands and break into granules.
  • Heat the pan with oil and add mustard sees, urad dal fry until it becomes golden brown, add cooked vegetables and dhal.
  • Add salt and cook for few mintues on low flame.
