BAINGAN (Fried EGG PLANT)

- Heat the pan
and add4 tsp urad
dalwithout adding oil and
fry until it becomes golden brown.
- Then grind the
urad dal nicely. Keep it aside.
- Clean
and cut egg plants vertically. Always keep the cut egg plants in
water otherwise it will turn black.
- Heat the pan
with the oil, addmustard
seeds, 1 tsp urad dal, fry for a min and add curry leaves.
- Then
add cut eggplant (wipe off
the water before adding it to the frying pan).
- Fry the
eggplant in the medium heat.
- Once
it is cooked well, add salt, red chili powder and stir
well. Then add
powdered urad dal and mix well.
