FRIED BAINGAN (Fried EGG PLANT)

Egg plant 3 medium
Urad dal 5 tsp
Red chili powder 1 tsp
Mustard seeds 1/2 tsp
Curry leaves
Salt
Oil
  • Heat the pan and add4 tsp urad dalwithout adding oil and fry until it becomes golden brown.
  • Then grind the urad dal nicely. Keep it aside.
  • Clean and cut egg plants vertically. Always keep the cut egg plants in water otherwise it will turn black.
  • Heat the pan with the oil, addmustard seeds, 1 tsp urad dal, fry for a min and add curry leaves.
  • Then add cut eggplant (wipe off the water before adding it to the frying pan).
  • Fry the eggplant in the medium heat.
  • Once it is cooked well, add salt, red chili powder and stir well. Then add powdered urad dal and mix well.
