Vegetarian Curry Recipes

BATATE SANGH (KONKANI)

Potatoes 4 (cut into cubes)
Onion 2(medium)
Tomato 1
Red chili powder 1 tsp
Tamarind paste 1/2 tsp
Coriander powder 1/2 tsp
Oil
Salt
  • Cut the potatoes into cubes and cook until it become tender.
  • Heat the pan with oil and add chopped onion and fry till it turn brown and addred chili powder and coriander powder, fry for a few more seconds.
  • Add chopped tomatoes and fry again on medium heat for 3 minutes, till the tomatoes are tender.
  • Then add the tamarind paste and boiled potato cubes.
  • Sprinkle some water and salt to taste. Mix thoroughly.
  • Cover and keep on low heat for 4 minutes.

  • This can be served with rice or chapatti.
