Vegetarian Curry Recipes

MIXED VEGETABLE CURRY

Carrot 2
Beans 15
Potato 1
Peas 1/4 cup
Capsicum 1
Mustard seeds 1/2 tsp
Asafoetida a pinch
Onion 1
Channa dal 2 tbsp
Coriander seeds 2 tsp
Peanuts 2 tsp
Red chili 6
Turmeric powder 1/2 tsp
Coriander leaves chopped
Salt
Oil
  • Heat the pan and add channa dal, coriander seeds, peanuts and red chili, fry without adding oil. And grind the fried ingredients into powder.
  • Cut all the vegetables into small pieces.
  • Heat the pan with oil and add mustard seeds fry for a min and add chopped onion fry until it becomes golden brown.
  • Add all the cut vegetables, turmeric powder, salt and 1 cup water.
  • Cook until the vegetables become soft.
  • Add ground masala powder, asafoetida and mix well.
  • Cook in the medium heat for 2 min.
  • Garnish with chopped coriander leaves.
